Abstract

This paper presents an overview of cane-sugar molasses. Molasses is the honey-like viscous syrup, the most valuable by-product obtained from the sugar industry. Cane molasses is the waste of the sugar manufacturing process from sugarcane and considered to be an inexpensive carbon source for microbial fermentation processes. In this review, we summarize the physical, biological and chemical properties as well as nutritional values of cane sugar molasses.
